Elaborate black-tie wedding buffet (all-day service)

This menu was customized for a black-tie wedding at a private residence overlooking Montague Harbour. There were 125 guests, and an open-bar service was offered.

-Grilled marinated beefsteak on Yukon Gold potato coins, grainy Dijon aioli and confit shallots

-Mini bagels with local smoked salmon, candied lemons, and flowering chive whipped fresh cheese

-Grilled halibut cheeks on roasted red pepper risotto cakes

-Beef skewers with cilantro-peanut sauce

-Mussels on the half-shell with creamy champagne sauce

-Asparagus wrapped in pancetta

-Tomato, basil, parmesan tartlets

-Chilled green gazpacho shot glasses

-Sushi and sashimi platters with house pickled ginger

-Seared prawns on pumpernickel with mango salsa

-Fruit platters with cinnamon-honey yogurt dip

-Strawberry, sugar foam, home-made lemongrass marchmallows in chocolate fondue
