This menu was designed for Kate Hennessy's post-wedding BBQ.. Kate grew up on Galiano, and we were all very eager to make a memorable contribution to her wedding. This was a great opportunity to do so. The guests were staying for a few days and the happy couple needed some support to feed them all. Much of the ingredients used for this BBQ were sourced locally.
HORS D'OEUVRES
-Smoked paprika and roasted garlic homous with pita
-Fruit platter
-Spanakopita
-Vegetarian tomato and parmesan puff pastry tart
-Vegetable platter and dips
-Local cheeses, spreads, patés, olives and selection of home-made breads
MAIN COURSE
-BBQ local Salmon sides with pomegranate glaze
-Grilled marinated flank steak
-Mixed local green salad with clove-honey vinaigrette
-Couscous salad with fresh mint
-Edamame, lemon and Pecorino salad with light lemony dressing
DESSERTS
-Carrot cupcakes with lemon-cream cheese icing
-Blackberry squares
-Brownies
